Moist Gluten-Free Brownies

Who doesn't love Chocolate Brownies? I've tried sooo many recipes for gluten free brownies, some resulted in flat brownies, some did not taste so good, whilst others I could have probably used as a murder weapon to hit somebody on the head with.. in other words, rock hard!!


I found this recipe online, which was originally for vegan's and so I tweaked it a little bit to my own taste. The result was sooo surprising! I never thought a gluten-free brownie could turn out so moist and tasty! Will definitely be making these babies again!!!

Ingredients: 

- 2 cups self-raising flour
⅓ cup cocoa powder
- 1 tsp baking power 
½ cup brown sugar 
½ tsp salt 
⅓ cup vegetable oil 
- 1¾ cup milk

Method: 

Preheat the oven to 180 degrees. Grease and/or line an 8 x 5 inch baking tray. 



In a large bowl mix together flour, cocoa, baking powder, sugar and salt. Add the oil and milk and stir until combined. 




Pour brownie batter into the baking dish and bake for 25- 30 minutes or until cooked through and a skewer inserted removes clean. 



Eat within 1-2 days. Best stored in the fridge, in an air-tight container. 



Note: Can be served with chocolate frosting or ice-cream if desired.
